Zucchini is one of the very lowest calorie vegetables, coming in under 20 calories per cup. It’s a good source of fiber and packed with beneficial nutrients including Vitamins C and A, potassium, and folate. Zucchini is super versatile and is as tasty eaten raw as it is cooked. If you are craving a little crunch, try cutting raw zucchini into sticks and pair it with healthy condiments, like hummus or guacamole. If you prefer zucchini cooked, saute spiralized zucchini noodles (“zoodles”) in a little olive oil with garlic and tomatoes for a nice light “pasta” meal, or serve a yummy protein packed turkey and spinach spaghetti sauce over your zoodles (shown). You can also mix grated zucchini into your baking. My kids love zucchini cookies and zucchini muffins. The zucchini not only adds fiber but it also adds moisture to the baking, and when paired with a no sugar added applesauce substitution for the oil, you’ve got yourself a much healthier muffin! One of the things I like about yoga is that it keeps one humble.  This one is way harder for me than a regular handstand because of my dislocating shoulders. The fact that the legs are off balance puts my shoulders in a position they don't like!
