Comfort Food Hack: Fried Rice(less)


Craving Chinese food? Satisfy your cravings with this healthy version of Chinese fried rice using cauliflower instead of rice! It’s super easy, tasty, and so convincing you won’t even miss the rice. Even just based on taste alone, I would choose this healthy version over the real thing!

To make cauliflower fried rice prepare all of your ingredients as you would for classic fried rice – except of course for the rice.  You can add whatever vegetables you want.  I started with 1/4 tsp of sesame oil in a medium pan.  I used 4 cloves of chopped garlic, finely chopped carrots, edamame and chopped scallions.  I was out of eggs, but you can add that too if you like (whole or egg whites).

I used approximately 2 cups of grated cauliflower, but if you have a food processor you can pulse until it’s chopped to about the size of rice.  Combine everything in the pan, fry it all up and add pepper and soy sauce to taste.  Garnish with toasted sesame seeds and fresh herbs (I used cilantro).  If you want to turn this into a complete meal add chicken or tofu.
