Sweet potato pizza bites! If you like pizza, search ask but don’t want all the fat, simple carbs, and calories, try these instead. They are super quick and easy to make, delicious, AND healthy. These are a great alternative to pizza, even for those who follow a low-carb diet.
For those who fear carbs – fear not! Remember that not all carbs are created equal! Although sweet potatoes are high in carbs, they don’t act the same way in our body as high-carb processed foods do. Due to the type and nature of the carbs they contain, sweet potatoes are highly satiating and give our body the energy we need. According to a 2002 article in the “American Journal of Clinical Nutrition”, eating sweet potatoes in moderate amounts will help keep your blood sugar levels in the healthy range, even if you have diabetes. In addition, sweet potatoes are nutrient dense, packed with vitamins and minerals, antioxidants and phytonutrients. Sweet potatoes even contain trace amounts of naturally occurring temazepam and diazepam (aka Valium) along with L-tyrosine (precursor to dopamine) and L-tryptophan – lots of “feel-good” neurotransmitters! Score!
Two sweet potatoes, sliced
Parmesan Cheese (or low fat mozzarella cheese, or other cheese of choice)
Toppings of choice (I used diced red peppers, and turkey pepperoni, rosemary, garlic powder, and oregano)
1) Brush or spray each sweet raw sweet potato slice with EVOO and bake at 400 degrees F for 10 minutes.
2) Remove from oven and add sauce and toppings of choice. Bake until cheese is melted and a little golden (approx 10 mins).
