Yummy Enchilada Comfort Food Hack

Enchiladas, while yummy, are often also calorie laden, high fat, high carb artery cloggers. This is a super delicious, simple and fast enchilada dish that is also very healthy. It’s filled to the brim with protein and fiber and is low in fat, sugar, and carbs (especially those of the simple variety). Winner winner enchilada dinner! Bon appétit!

Healthy Enchilada Comfort Food Hack
Serves 5
High in protein, fiber, and deliciousness; low in fat, sugar and carbs.

  1. 1 lb lean ground turkey
  2. 1 small onion, diced
  3. 1/4 of a small cabbage, shredded
  4. 1/3 1 lb bag of frozen spinach
  5. 1 bell pepper (red or green), chopped
  6. 1 20 ounce can enchilada sauce (green or red)
  7. 1/3 cup parmesan-romano fresh grated cheese
  8. 6 large high fiber, low carb tortillas (*we recommend La Victoria High Fiber, Low Carb Whole Wheat tortillas)
  1. Cook ground turkey in frying pan until cooked through. Drain any liquid.
  2. Saute onion, cabbage, and bell pepper together. Drain any liquid. Add to turkey.
  3. Microwave frozen spinach until thawed. Drain any liquid. Add to turkey and veggie mixture.
  4. Add about 1/2 of the enchilada sauce.
  5. Place a few large spoonfuls of meat mixture into each tortilla and roll.
  6. Place into a 9x13 baking dish.
  7. Cover rolled enchiladas with remaining enchilada sauce.
  8. Top with cheese.
  9. Bake at 350F for 10-15 minutes until heated through and cheese is melted and sauce is bubbly.
  10. Top with sliced avocado and fat free sour cream (be sure to use the kind with only 1-2g of sugar). I also like to add some spicy fresh salsa - yum! Enjoy!
