Comfort Food Hack: Shrimp “Linguine” in a Garlic Basil Sauce

This dish is damn delicious. I’m sorry but there’s no other way to put it. If you don’t like shrimp, sub in some other protein. It will still be damn delicious. Not only does it satisfy the tastebuds but it also satisfies hunger due to it’s high fiber content. It is also low carb, low fat, high protein and nutrient dense. But wait…there’s more! It’s super easy and quick to make. Winner winner zucchini & shrimp dinner! Eating healthy doesn’t have to be boring or tasteless.

Skinny Shrimp "Linguine" in a Garlic Basil Sauce

A delicious & healthy way to enjoy shrimp "linguine".

For the "linguine"
  1. 4 medium zucchinis, spiralized
For the sauce
  1. 1/8 teaspoon EVOO
  2. 6 cloves of garlic, chopped
  3. salt & pepper to taste
  4. 1/2 pound - 3/4 pound deveined shrimp
  5. 1/2 pound grape tomatoes, sliced
  6. 1/4 cup chopped fresh basil (or 8 tsp cubes of frozen chopped basil)
Instructions
  1. Spiralize the zucchinis and set aside.
  2. In a medium saucepan, heat the EVOO and once slightly heated add in the garlic and salt and pepper.
  3. Add in the tomatoes and sauteé until starting to soften, then add in the basil and shrimp and sauteé until mostly done.
  4. In a separate saucepan, cook the spiralized zucchini "linguine noodles" (no oil or water is needed).
  5. Plate the dish by placing a serving of zucchini linguine on a plate and then top with the shrimp and sauce mixture.
  6. Bon appétit!
Notes
  1. This dish is pretty quick and easy already but you can save more time by using frozen cooked shrimp and frozen chopped basil.
