Healthy & Easy Chicken Soup

Chicken soup is one of the ultimate comfort foods. Many of us turn to a bowl of soothing hot chicken soup to make us feel better when we are sick, or to warm us up on a chilly autumn night. Surprisingly, many chicken soup recipes are not that healthy! Many are loaded with sodium, fat, and simple carbs. This chicken soup recipe is not only super healthy but it’s also really easy and very tasty. Even my kids like it and they are hard to please! Though my daughter picks out the carrots and my son picks out the celery. They can’t both like the same thing, of course! So try this easy & healthy chicken soup recipe next time you’re craving a classic comfort food.

Ingredients
  1. 4 14oz cans low sodium fat free chicken broth
  2. 1.5 cups baby carrots, chopped
  3. 1.5 cups celery, chopped
  4. 2 12.5oz cans of chicken breast
  5. 1/2 cup faro
  6. Dried parsley, sage, rosemary, & thyme (to taste)
Instructions
  1. Pour chicken broth and faro and spices into a large pot set on high.
  2. Wait until boiling and set timer for 10 minutes.
  3. Chop the carrots and celery and add to the broth once it has been boiling for 5 minutes.
  4. Add the canned chicken and boil for remaining 5 minutes.
Notes
  1. You can make this a vegetarian version of this by using vegetable broth and subbing tofu or garbanzo beans in place of the chicken.
