Healthier Spiced Pumpkin Oat Muffins

Who loves pumpkin?! If you love pumpkin EVERYTHING, like me, try this healthier version of a pumpkin muffin. They have 75% less sugar, half the fat, twice the protein, and twice the fiber of a regular pumpkin muffin. And…they are delicious. I especially like them because they are not too sweet, yet are full of flavor. These are great as a protein and fiber-filled quick breakfast, or as a pre-workout snack.

Healthier Spiced Pumpkin Oat Muffins
A delicious and nutritious pumpkin muffin that is low in fat, and sugar and high in fiber and protein.

  1. 1 16-oz can of solid pack pumpkin
  2. 3 large eggs
  3. 3/4 cup apple sauce
  4. 1/4 cup vegetable oil
  5. 1 cup brown sugar (soft-packed)
  6. 1/4 cup white sugar
  7. 1.5 cups oat flour
  8. 1.5 cups all purpose flour
  9. 2 tsp ground cloves
  10. 2 tsp ground cinnamon
  11. 2 tsp ground nutmeg
  12. 1/2 tsp pumpkin pie spice
  13. 1 tsp baking soda
  14. 1/2 tsp salt
  15. 1/2 tsp baking powder
  1. Preheat oven to 350 degrees F.
  2. Place muffin liners in mini muffin tins (or regular muffin tins).
  3. In a large bowl, beat sugar, applesauce, and oil in large bowl to blend.
  4. Mix in eggs and pumpkin.
  5. In a separate bowl, mix flour, cloves, cinnamon, nutmeg, pumpkin pie spice, baking soda, salt and baking powder together.
  6. Stir dry mixture into pumpkin mixture in two additions.
  7. Divide batter equally in muffin tins.
  8. Bake until tester inserted into center comes out clean, about 16 minutes for mini muffins.
