Never liked cauliflower until I had it roasted. Now I think it’s better than candy. I’ve been known to down a whole head of roasted cauliflower all by myself. Cauliflower is a nutritious, fiber-rich veggie that is very versatile in a low-carb, high-fiber diet. It is high in anti-oxidants, such as vitamin C, manganese and carotenoids. It also contains glucosinolates and thiocyanates, which help increase the liver’s ability to neutralize potentially toxic substances.  In addition to being a cancer-fighting veggie, it also has anti-inflammatory properties due to it’s high vitamin K and omega-3 fatty acids content. We love roasting cauliflower with just a bit of olive oil, salt and pepper.  Easy and tasty! Cauliflower is also great as a low-carb version of mashed “potatoes”. Eating healthfully doesn’t have to be tasteless or boring.  Lower the fat and increase the protein in chicken or tuna salad by skipping the mayo and subbing in either greek yogurt or cottage cheese.  My personal preference is the cottage cheese substitution b/c it has slightly more protein, half the carbs, and a third of the sugar than Greek yogurt.  I also prefer the way it makes the chicken or tuna salad taste, since it’s less tart than yogurt.  If you think the texture will bother you, opt for the Greek yogurt. Either way, you can’t go wrong with this healthy spin.  If you are reducing your carbs, try putting it over a salad rather than eating it as a sandwich.

Recipe:  canned chicken breast, mixed with fat free cottage cheese, chopped Thai lime almonds, dried cranberries, pickles and/or banana peppers, sriracha and black pepper to taste.
