Never liked cauliflower until I had it roasted. Now I think it’s better than candy. I’ve been known to down a whole head of roasted cauliflower all by myself. Cauliflower is a nutritious, fiber-rich veggie that is very versatile in a low-carb, high-fiber diet. It is high in anti-oxidants, such as vitamin C, manganese and carotenoids. It also contains glucosinolates and thiocyanates, which help increase the liver’s ability to neutralize potentially toxic substances. In addition to being a cancer-fighting veggie, it also has anti-inflammatory properties due to it’s high vitamin K and omega-3 fatty acids content. We love roasting cauliflower with just a bit of olive oil, salt and pepper. Easy and tasty! Cauliflower is also great as a low-carb version of mashed “potatoes”.
