Are you REALLY awesome at eating cookies but not so awesome at eating oatmeal? Try these high fiber banana oatmeal drops - 3 ingredients! Simple, healthy and tasty! I can’t remember where I saw this, but I wanted to try it with my own tweaks. Mix 2 bananas with 1 cup regular oats (chop them up a little), and add some dark chocolate chips. I also decided to add cinnamon and nutmeg (because I add cinnamon to practically everything - yum!). Bake for 15 mins at 350 F. Perfect for when you are feeling snacky or want a bit of a treat. Notice that I did not call them cookies. That sets up an expectation that, in my opinion, will not be met. They are a tasty healthy treat though…my kids even liked them. They are great the next day (toast them) and just perfect if you need to take your breakfast to-go. And yes, there is a big bite out of the one in front! I was eager to try them.

Did you know that red bell peppers make you burn more calories?! *According to recent research, sweet red peppers can activate thermogenesis and increase metabolic rate. Someone get me a red pepper STAT!More reasons we should eat red bell peppers:1) They have twice the vitamin C and 9 times the vitamin A of their green cousins.2) They are an excellent source of vitamin B6 and magnesium. This B6-Magnesium combo has been shown to decrease anxiety. Also, B6 is a natural diuretic, so eat ‘em up to reduce bloating and prevent hypertension!3) They are packed with Lycopene! In fact, red peppers come in just under tomatoes as one of the veggies highest in lycopene, which has been shown to aid in the prevention of cancer.Although the health benefits of red peppers are strongest when raw, try stuffing them! Dress up this lady in red with ground turkey mixed with spinach, zucchini, quinoa, and a little tomato sauce. Yum!

If you are craving a little crunch, try cutting raw zucchini into sticks and pair it with healthy condiments, like hummus or guacamole. If you prefer zucchini cooked, saute spiralized zucchini noodles (“zoodles”) in a little olive oil with garlic and tomatoes for a nice light “pasta” meal, or serve a yummy protein packed turkey and spinach spaghetti sauce over your zoodles (shown). You can also mix grated zucchini into your baking. My kids love zucchini cookies and zucchini muffins. The zucchini not only adds fiber but it also adds moisture to the baking, and when paired with a no sugar added applesauce substitution for the oil, you’ve got yourself a much healthier muffin! How do you like to eat zucchini?

The effect that diet can have on you now and in the future is astounding. Putting the right food in your body, is akin to putting the right gasoline in your car - the type of fuel affects how well it functions. Making the right food choices can reduce, eliminate, or prevent a variety of ailments. In the case of salmon, this “SuperFood” has been shown to lower heart disease risk, help arthritis, reduce depression and possibly help with memory loss and Alzheimer’s. When I think of food as fuel for my most important machine, I tend to make better choices. Today’s lunch is last night’s grilled salmon (in Montreal Steak Spice) over salad with a splash of rice vinegar as dressing. Yummy AND healthy! In addition to salmon’s amazing Omega-3 benefits, several recent studies have shown that salmon also contains bioactive peptides that provide special support for joint cartilage, insulin effectiveness, and the control of inflammation in the digestive tract. It’s also chock full of vitamins and minerals and high in protein! High protein foods require more energy from the body to process and are also good for muscle building, which in turn helps to increase fat burning and metabolism (assuming you are also working out). So go eat some salmon this week!

#Roadtrip food! Much to the delight of my family in the car who all think hardboiled eggs are super stinky! Trying to stick to mostly clean eating on the 7 hour drive back home (and making up for some vacation indulgences). I almost always carry around a cooler with healthy food - even if I'm just out for a few hours. Helps me to avoid poor choices. #eatclean #eatcleantraindirty #cleaneating #healthyfood #healthymeals #healthyfoodporn #healthymom #healthyspo #fitspo #fitfam #fitness #fitmama #fitmommy #bodyafterbaby #weightloss #health #lowcal #fitfood #healthy #healthychoices

Need a healthy and delicious appetizer for your Superbowl party? I often bring this little appy when I’m heading to a party to make sure that there is at least one healthy option. Then I camp out by the cheese dip and jalapeño poppers (just kidding)! This is a very easy and tasty app that even my lentil and bean-hating husband really likes. Not only is it easy and tasty but it’s super healthy. Take note, my fitness friends, lentils should be in your secret arsenal of muscle building weapons. One cup of cooked lentils contains 18 grams of protein, 40 grams of slow digesting quality carbohydrates, 37% of your daily value of iron, 16g of fiber, but just 1g of fat. Lots of disease fighting nutrients too! Not too shabby, huh?Whip this lentil dip up by using 1 pkg of Trader Joe's cooked lentils, 1 container TJ’s bruschetta (or make your own), 1 container TJ’s crumbled feta (optional), chop up some fresh basil and mix it all up! Takes about 1 minute to prep! To be extra healthy, I like to eat it with cucumber slices instead of crackers. Delicious!#lentils #eatclean #eatcleantraindirty #healthyeating #healthymeals #fitness #weightloss #girlswithmuscle #fitchick #fitgirls #traderjoes #healthyfood #fitforce #vegetarian #Superbowl #partyfood #fitfam #healthyfoodporn #healthyliving #lowcal #weightlossjourney #partyfood #healthychoices #healthy #glutenfree
